Orange Roughy with Oriental Sauce

A delicious, easy-to-prepare, "Heart Healthy" recipe from Seafood: A Collection of Heart Healthy Recipes.

Ingredients:

  • 1/4 cup orange juice
  • 2 Tbsp polyunsaturated oil
  • 2 Tbsp light soy sauce
  • 1 Tbsp lemon juice
  • 1 clove garlic, minced
  • 1/8 tsp pepper
  • 2 pounds orange roughy

Directions:

Combine marinade ingredients. Marinate orange roughy in sauce for 15-20 minutes. Place fish on lightly oiled grill, barbecue over hot coals or broil in oven. Cook fish for ten minutes per inch of thickness, or until the flesh is opaque, brushing frequently with marinade.
