Microwaved Orange Roughy with Lemon Sauce

The traditional lemon accompaniment to fish takes on new form in this light sauce.

Ingredients:

  • 1 Tbsp butter or margarine
  • 1 Tbsp flour
  • 2/3 cup milk
  • salt
  • 1 Tbsp fresh lemon juice
  • 1 tsp snipped fresh chives (or green onion tops)
  • 1.5 lbs orange roughy fillets

Directions:

Microwave butter in a 2-cup glass measure on high power for 45 seconds or until melted. Stir in flour, coating it thoroughly. Add milk and salt; whisk until smooth. Microwave, uncovered, on high for 2.5-3 minutes or until mixture thickens and boils, stirring once or twice. Stir in lemon juice and chives. Set aside.

Place fillets in a 12x8 microwave-safe baking dish. Cover with plastic wrap, venting one corner. Microwave fish on high for 4-5 minutes or until fish flakes with fork, rotating dish once. Serve with warm sauce.
