Orange Roughy A L'Orange

Orange juice and rind are a refreshing change from the traditional squeeze of lemon.

Ingredients:

  • 3 Tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp grated orange rind
  • 2 Tbsp orange juice
  • Pepper to taste
  • 1.5 lbs. orange roughy fillets
  • Nutmeg, preferably fresh grated

Directions:

Preheat oven to 350 degrees F. Combine oil, salt, orange rind, orange juice and pepper in a small bowl. Place fillets in a single layer in a lightly oiled baking dish, and pour the sauce over them. Sprinkle with nutmeg. Bake, uncovered, for 20 minutes or until fish is opaque and flakes when tested with a fork.
