Black Bean Spread

Ingredients:

  • (1) 15-oz can black beans, drained and rinsed
  • 2 Tbsp fresh lime juice (from 1 lime)
  • 1 Tbsp Vera Jane’s Extra-Virgin Olive Oil
  • 1/2 to 1 tsp minced fresh garlic
  • 1 tsp ground cumin
  • 1/4 tsp Tabasco sauce
  • Pinch of salt
  • Freshly ground pepper, to taste
  • 2 Tbsp chopped fresh cilantro

Directions:

Place first eight ingredients in a food processor; process until smooth. Transfer to a medium bowl and stir in cilantro. Makes about 1½ cups

Per 2 Tbsp serving: 42 calories; 32% calories from fat; 1g total fat; 0g saturated fat; 0mg cholesterol; 135mg sodium; 5g total carbohydrates; 2g protein
