Alsacienne Sauerkraut
Ingredients:
- 1 lb bacon, chopped
- 2 large onions, chopped
- 6 lbs sauerkraut, rinsed and drained
- 1 piece of smoked pork
- 1 piece of salt pork
- 3 DLM Mettwursts
- 3 DLM Bratwursts
- 4 cups white wine
- 8 cups beer
- 1 Tbsp dried thyme
- 3 bay leaves
- 2 tsp whole cloves
- 2 tsp garlic powder
- 1 tsp coriander
- 1½ Tbsp juniper berries
- Salt and pepper
Directions:
Cook bacon until it starts to brown. Add onions and cook
until softened. Add sauerkraut and remainder of ingredients.
Cook slowly for 4-5 hours, until thickened. Remove sausages
after 2 hours. Season to taste with salt and pepper.
