Alsacienne Sauerkraut

Ingredients:

  • 1 lb bacon, chopped
  • 2 large onions, chopped
  • 6 lbs sauerkraut, rinsed and drained
  • 1 piece of smoked pork
  • 1 piece of salt pork
  • 3 DLM Mettwursts
  • 3 DLM Bratwursts
  • 4 cups white wine
  • 8 cups beer
  • 1 Tbsp dried thyme
  • 3 bay leaves
  • 2 tsp whole cloves
  • 2 tsp garlic powder
  • 1 tsp coriander
  • 1½ Tbsp juniper berries
  • Salt and pepper

Directions:

Cook bacon until it starts to brown. Add onions and cook until softened. Add sauerkraut and remainder of ingredients. Cook slowly for 4-5 hours, until thickened. Remove sausages after 2 hours. Season to taste with salt and pepper.

Makes 16 servings
