Gourmet Grilled Cheese

Ingredients:
- 8 slices DLM Farmhouse Bread
- 3 Tbsp Vera Jane’s Extra-Virgin Olive Oil
- 8 tsp DLM Tapenade (olive spread)
- 8 oz Tillamook Sharp Cheddar Cheese, shredded
- 3 Tbsp minced fresh basil
- 2 roasted red peppers, cut into strips
- 8 slices DLM Uncured Bacon, cooked
Directions:
Brush one side of each bread slice lightly with olive oil.
Turn over 4 slices, oil sides down, and spread 2 tsp tapenade
on each. Toss shredded cheese with basil; press half of the
cheese on tapenade.
Top with red peppers, bacon, then remaining cheese mixture.
Place remaining bread slices oil side up.
Grill sandwiches over medium heat in large skillet until golden
brown, about 5 minutes per side.
Makes 4 sandwiches.
