Tapas With Manchego Cheese

Ingredients:
- 1/2 French baguette, cut into 24 slices
- 2/3 lb Manchego Cheese
- 5 vine-ripened tomatoes
- Salt and freshly ground pepper
- 1/4 cup extra-virgin olive oil
- Small basil leaves for garnish
Directions:
Toast bread slices under broiler until lightly brown. Slice Manchu into 1/4-inch
slices. Cut each slice into 4 pieces (24 pieces needed). Coarsely grate remainder
of cheese.
Top each baguette slice with 1 slice of Manchego and 1 tomato slice. Drizzle
with olive oil, and season with salt and pepper. Sprinkle with grated Manchego.
Broil the rounds for 2 minutes or until the cheese is bubbly. Garnish with
basil.
