Flan, Canary-Style (Quesillo)

Adapted from Deliciouso! by Penelope Casas. Flan is a traditional Spanish custard. The addition of almonds gives a delicate and sweet flavor.

Ingredients:
Prepare flan one day in advance

  • 3 eggs
  • 1/2 cup sweetened condensed milk
  • 2 cups milk
  • 1/3 cup ground blanched almonds
  • Hot water

Caramelized Sugar

  • 1/2 cup sugar

Before preparing flan, heat 1/2 cup sugar in a small, heavy saucepan over medium heat, stirring constantly, until sugar melts and is golden brown. Divide syrup among (5) 6-oz custard cups; tilt and rotate each cup to coat the bottom and some of the sides.

Directions:

Preheat oven to 350°F. Prepare caramelized sugar, and coat the bottom and the bottom portions of the sides of the cups.

Whisk eggs; add both types of milk and ground almonds.

Pour egg mixture into prepared custard cups; place cups in a 9" x 13" baking pan. Pour very hot water around cups to within 1/2 inch from the top. Bake about 25 to 30 minutes or until a knife inserted in the center of the custard comes out clean.

Remove custards from the water bath; cover with plastic wrap and refrigerate overnight. Invert custard cups on a dessert plate to unmold. Caramel syrup will run down side of custard forming a sauce. Serve cold.
