Strawberry And Stilton Salad

Fresh basil enhances the flavor of this light dressing.

Ingredients:
- 2 cups sliced strawberries
- 2 Tbsp chopped fresh basil
- 2 Tbsp raspberry vinegar
- 1/2 tsp sugar
- 1 tsp Vera Jane's Extra-Virgin Olive Oil
- 1 tsp water
- 4 cups mesclun mix
- 1/4 cup (1 oz) crumbled Stilton cheese (we prefer Colston Bassett Stilton)
Directions:
In a medium bowl, combine strawberries, basil, vinegar, and sugar; toss well
to coat. Cover and refrigerate 1 hour.
Pour strawberry mixture into a strainer set over a bowl. Set aside strawberries;
pour reserved liquid into a jar. Add oil and water to jar. Cover tightly and
shake vigorously.
Arrange greens onto 4 individual salad plates, dividing equally. Top each
salad with 1/4 of the reserved strawberries and 1 tablespoon of cheese. Drizzle
each salad with 2 teaspoons dressing. Serve with our Bakery's French baguettes.
