Goat Cheese Bruschetta

Ingredients:
- 6 plum tomatoes, seeded and chopped
- 1 tsp fresh lemon juice
- Salt and freshly ground pepper
- (1) 4-oz pkg Couturier Goat Cheese
- 18 DLM Zesty Toasties (in our Bakery Dept.)
- 3 Tbsp chopped fresh mint
Directions:
Combine tomatoes and lemon juice. Season generously with salt and pepper.
Preheat oven to 350°F. Spread goat cheese over toasts; arrange on a baking
sheet. Mound tomatoes on toasts, dividing equally. Bake until heated through,
about 8 minutes. Transfer bruschetta to platter. Sprinkle with mint.
Makes 18 bruschettas
