Carrot Apple Salad

Ingredients:

  • 2 cups grated organic carrots
  • 1/4 tsp kosher salt
  • 1 chopped Braeburn apple
  • 1 jalapeņo pepper, halved and seeded, for garnish
  • 3 Tbsp lemon juice, to taste
  • 1 Tbsp finely chopped cilantro

Directions:

In a medium-sized bowl, combine the carrots, apple, and the lemon juice, to taste. Add the cilantro and salt. Garnish with a jalapeņo pepper.

Makes 5 servings
