Carrot Apple Salad

Ingredients:
- 2 cups grated organic carrots
- 1/4 tsp kosher salt
- 1 chopped Braeburn apple
- 1 jalapeņo pepper, halved and seeded, for garnish
- 3 Tbsp lemon juice, to taste
- 1 Tbsp finely chopped cilantro
Directions:
In a medium-sized bowl, combine the carrots, apple, and the lemon juice,
to taste. Add the cilantro and salt. Garnish with a jalapeņo pepper.
