Broiled Mahi-Mahi

Adapted from Seafood Twice A Week by Evi Hansen & Cindy Snyder

Ingredients:

  • 1 lb mahi-mahi fillets
  • 1/4 cup dry white wine
  • 1 Tbsp parsley, chopped
  • 1 Tbsp unsalted butter
  • 4 drops hot pepper sauce (Tabasco), if desired
  • 2 tsp fresh lemon juice
  • Salt and freshly ground pepper, to taste
  • 1 clove garlic, minced

Directions:

Preheat broiler. Combine all sauce ingredients in a saucepan; heat slowly until butter is melted. Place fillets on the broiler pan; brush with sauce. Broil about 4 inches from heat for 3 to 4 minutes. Turn carefully and brush with more sauce. Broil until done. Season as desired.

Makes 4 (3-oz) servings

Per 3-oz serving: 130 calories (25% calories from fat); 4g total fat; 2g saturated fat; 87mg cholesterol; 99mg sodium; .7g total carbohydrates; 20g protein
