Hawaiian Smoothie

Adapted from Doug Johnstone’s recipe created for the Kettering
Medical Center.
Ingredients:
- (1) 6-oz can pineapple juice, unsweetened
- (1) 8-oz can crushed pineapple
- 2 Tbsp apricot jam
- (1) 12.3-oz pkg silken firm tofu
- 1 ripe banana
Directions:
Combine all ingredients in a blender. Whip until smooth. Chill or blend with
a few ice cubes. Serve cold.
Makes 4 (8-oz) servings
Per 8-oz serving: 176 calories (14% calories from fat); 3g total fat; .5g
saturated fat; 0mg cholesterol; 39mg sodium; 32g total carbohydrates; 8g protein
