Tofu Pockets

Ingredients:
- 16 oz firm organic tofu
- 1 tsp minced fresh ginger (or to taste)
- 1/2 cup Veri Veri Teriyaki marinade
- Sesame oil
- Thin slices button mushrooms
- 1 tsp Chinese Five Spice
- 1 tsp minced garlic (or to taste)
Directions:
Preheat oven to 425º F. Rinse the tofu in cold water. Cut in half lengthwise.
Slice a pocket on one side. Insert thin slices of mushroom, garlic, and ginger.
Brush each side with sesame oil. Sprinkle top with Chinese Five Spice.
Bake on a cookie sheet for 20 minutes. Baste with additional sesame oil,
and bake 10 minutes more. Serve over soy-sauced rice or rice noodles.
