Tropical Fruit Salad

Ingredients:
- Dressing:
- 3 Tbsp vegetable oil
- 1/4 tsp hot pepper sauce
- 3 Tbsp lime juice
- 1/2 cup (2 oz) shredded cheese blend (or a low-fat cheese variety)
- 2 tsp sugar
- 1/4 tsp freshly ground pepper
- Salad:
- 1 mango, peeled, seeeded, and cut into 1-inch pieces
- 1 cup halved, seedless red grapes
- 1/2 cup walnut halves, toasted
- 1 medium green apple, cut into thin wegdes and halved
- 1 cup (4 oz) shredded cheese blend (or a low-fat cheese variety)
- 3 kiwi, peeled and sliced
Directions:
In a small bowl, combine all dressing ingredients except cheese; whisk to
blend. Stir in cheese. Set aside. In a large mixing or salad bowl, combine
all salad ingredients except nuts and cheese. Add dressing; toss. Chill, if
desired. Toss with walnuts and cheese.
Makes 10 (3.5-oz) servings
