Tropical Fruit Salad

Ingredients:

  • Dressing:
    • 3 Tbsp vegetable oil
    • 1/4 tsp hot pepper sauce
    • 3 Tbsp lime juice
    • 1/2 cup (2 oz) shredded cheese blend (or a low-fat cheese variety)
    • 2 tsp sugar
    • 1/4 tsp freshly ground pepper
  • Salad:
    • 1 mango, peeled, seeeded, and cut into 1-inch pieces
    • 1 cup halved, seedless red grapes
    • 1/2 cup walnut halves, toasted
    • 1 medium green apple, cut into thin wegdes and halved
    • 1 cup (4 oz) shredded cheese blend (or a low-fat cheese variety)
    • 3 kiwi, peeled and sliced

Directions:

In a small bowl, combine all dressing ingredients except cheese; whisk to blend. Stir in cheese. Set aside. In a large mixing or salad bowl, combine all salad ingredients except nuts and cheese. Add dressing; toss. Chill, if desired. Toss with walnuts and cheese.

Makes 10 (3.5-oz) servings
