Crunchy Pecan Wild Rice

This wild rice dish, crunchy with pecans, is a harmonious addition to any meal. Make it the day before, and warm in the microwave — very convenient!

Ingredients:

  • 4 cups cooked wild rice (about 1 cup uncooked)
  • 4 Tbsp unsalted butter
  • 1 onion, finely chopped
  • 1 tsp seasoned salt
  • 1 cup chopped pecans
  • 3 Tbsp freshly chopped parsley

Directions:

Prepare wild rice according to basic package directions. Sauté onion and pecans in butter; sprinkle with seasoned salt. Stir in the wild rice, and cook until heated. Adjust seasoning. Sprinkle with parsley.

Makes 6 – 8 servings
