Three-Cheese Polenta Pizza

Ingredients:
- 1 pkg (18 oz) polenta, cut into 12 slices
- 1/4 tsp coarsely ground pepper
- 2 Tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1 cup ricotta cheese
- 6 plum tomatoes, cut into 1/4 inch dice
- 1/2 cup shredded mozzarella cheese
- 1/2 cup loosely packed fresh basil leaves, sliced
- 1/4 cup grated Parmesan cheese
- Basil sliced into thin strips (optional)
Directions:
Brush the polenta rounds with oil, and grill or sauté in a large skillet
until lightly browned and warm. Meanwhile, in a medium bowl, mix ricotta,
mozzarella, parmesan, pepper, and 1/4 tsp salt until blended. Toss the tomatoes
with the sliced basil and add 1/4 tsp salt.
Using the same skillet over medium heat, spoon ricotta mixture over polenta
slices and top with tomato mixture. Cover skillet and cook polenta pizza about
5 minutes, until it is hot and cheese has melted. Sprinkle with thin strips
of fresh basil before serving, if desired.
