Three-Cheese Polenta Pizza

Ingredients:

  • 1 pkg (18 oz) polenta, cut into 12 slices
  • 1/4 tsp coarsely ground pepper
  • 2 Tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1 cup ricotta cheese
  • 6 plum tomatoes, cut into 1/4 inch dice
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup loosely packed fresh basil leaves, sliced
  • 1/4 cup grated Parmesan cheese
  • Basil sliced into thin strips (optional)

Directions:

Brush the polenta rounds with oil, and grill or sauté in a large skillet until lightly browned and warm. Meanwhile, in a medium bowl, mix ricotta, mozzarella, parmesan, pepper, and 1/4 tsp salt until blended. Toss the tomatoes with the sliced basil and add 1/4 tsp salt.

Using the same skillet over medium heat, spoon ricotta mixture over polenta slices and top with tomato mixture. Cover skillet and cook polenta pizza about 5 minutes, until it is hot and cheese has melted. Sprinkle with thin strips of fresh basil before serving, if desired.
