Baked Chicken with Crème Fraîche

Easy to prepare; great taste!
Ingredients:
- 1 cup crème fraîche
- 1/2 cup dry sherry
- 1/4 cup Dijon mustard
- 4 tsp dried tarragon, crumbled
- Freshly ground pepper, to taste
- 6 – 8 Wellington Farms boneless, skinless chicken breast halves or thin-sliced
boneless, skinless chicken breast halves
- 16 buttery crackers, crushed
Directions:
Preheat oven to 350º F. Coat a 13 x 9-inch baking dish with cooking spray.
In a medium bowl, stir together crème fraîche, sherry, mustard, tarragon,
and pepper. Pour mixture into the baking dish. Add chicken to the baking dish,
turning it to coat well. Sprinkle with crushed crackers. Bake approximately
30 minutes, depending on the thickness of the chicken. Cook thoroughly.
