Spinach and Potato Gnocchi

Ingredients:
- 1/4 cup olive oil
- 6 large cloves garlic, minced
- 1 lb fresh spinach (salad bar), chopped
- 1/4 tsp crushed red pepper flakes
- 2 lb potato gnocchi (grocery section)
- Salt and freshly ground pepper to taste
Directions:
Fill a 6-8 quart pot with water and bring to boil. Heat the oil in a skillet
over low heat. Add the garlic and sauté until softened. Add the spinach and
red pepper flakes. Raise the heat slightly, cover, and cook about 15 minutes,
stirring occasionally, until tender; keep the spinach warm. Add salt and pepper.
Cook the gnocchi in boiling water according to the package directions. Drain
and add to the spinach. Stir to combine well. Serve immediately.
