Light Summer Melon Salad

Ingredients:
- 1 cup ripe cantaloupe melon balls
- 1 cup ripe honeydew melon balls
- 3/4 cup finely chopped red bell pepper
- 3 Tbsp finely chopped red onion
- 3 Tbsp chopped fresh basil (purple basil is most attractive)
- 3 Tbsp seasoned rice wine vinegar
- Juice of 1/2 lime
- 2 Tbsp sugar
Directions:
Place in a medium-size bowl the melon, pepper, onion, and basil. Combine remaining
ingredients in a smaller bowl. Just before serving, pour the liquid mixture
over the melon mixture.
Makes 4 to 5 servings

fat; 0mg cholesterol; 206mg sodium; 17g total carbohydrates; .84g protein
