Light Summer Melon Salad

Adapted from Delicious! Your Guide to Natural Living, June 1999. This magazine can be found in our DLM Healthy Living Department.

Ingredients:

  • 1 cup ripe cantaloupe melon balls
  • 1 cup ripe honeydew melon balls
  • 3/4 cup finely chopped red bell pepper
  • 3 Tbsp finely chopped red onion
  • 3 Tbsp chopped fresh basil (purple basil is most attractive)
  • 3 Tbsp seasoned rice wine vinegar
  • Juice of 1/2 lime
  • 2 Tbsp sugar

Directions:

Place in a medium-size bowl the melon, pepper, onion, and basil. Combine remaining ingredients in a smaller bowl. Just before serving, pour the liquid mixture over the melon mixture.

Makes 4 to 5 servings

Per serving: 66 calories; (3% calories from fat); 21g total fat; .04g saturated fat; 0mg cholesterol; 206mg sodium; 17g total carbohydrates; .84g protein
