Tomato Relish

Ingredients:
- 2 Tbsp olive oil
- 1 tsp sugar
- 1/2 medium red onion, slivered
- 1/4 tsp salt
- 4 Roma tomatoes, seeded and coarsely chopped
- 1/8 tsp freshly ground pepper
- 2 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh thyme
Directions:
Heat oil in a sauté pan over low heat. Add onion and cook until caramelized,
20–25 minutes. Stir in tomatoes, vinegar, sugar, salt, and pepper. Cook 8–10
minutes or until the relish is thick and chunky. Add chopped thyme. Serve
the relish with hamburgers and toasted hamburger buns or our Rustic Country
rolls.
