Sea Scallops

Ingredients:
- Clarified butter (see recipe #656)
- Flour
- Scallops—about 1/4 lb per person
- Minced parsley
- Lemon pepper, optional
Directions:
Dust scallops lightly with flour. Melt butter in hot skillet. Cook scallops
quickly—about 1 to 1½ minutes per side. Garnish with parsley and lemon pepper,
if desired.
Hints:
- For suberb eating, prepare the scallops on the day of purchase.
- Maintain fresh flavor by placing scallops in a covered glass dish in the
coldest section of the refrigerator.
- Do not allow scallops to rest on ice or in water.
