Benedictine Spread

This appetizing spread is adapted from a recipe
by Linda Gallant, an avid DLM shopper.

Ingredients:

  • 1 medium cucumber, peeled and seeded
  • Salt
  • 1/2 medium onion, finely minced
  • (1) 8-oz pkg cream cheese, softened
  • 1/4 tsp Cayenne pepper, or to taste
  • Dash of Tabasco sauce

Directions:

Grate cucumber and sprinkle lightly with salt; set aside for five minutes. Combine cucumber with onion, and place in cheesecloth or several paper towels. Squeeze until most of the liquid is extracted.

Using an electric mixer, mix cream cheese until light. Add the cucumber and onion and beat well. Season with Cayenne pepper, Tabasco sauce, and additional salt, if desired. Serve as a dip, or spread on toasts of DLM’s French baguettes.
