Serrano Green Beans

Ingredients:

  • 1 lb green beans
  • 1 to 2 Tbsp Spanish olive oil (we prefer Nuñez de Prado)
  • 2 thin slices Serrano ham, diced
  • 1/3 cup Manchego cheese, grated

Directions:

Blanch green beans only until crisp-tender (approximately 4 minutes).

In a nonstick skillet, add the olive oil, then sauté the ham and green beans until warm and to the tenderness desired.

Add Manchego cheese to the warm beans in the skillet. Put in a serving dish, and grate additional cheese over beans.

Makes 4 to 5 servings

Per 4-oz serving: 142 calories (66% calories from fat); 10g total fat; 4g saturated fat; 14mg cholesterol; 397mg sodium; 6g total carbohydrates; 6g protein
