Smoked Chicken / Ancho Chile Sandwiches

Ingredients:

  • 1/2 lb smoked chicken breast, skinned and thinly sliced
  • 8 oz cream cheese, softened
  • 2 Tbsp minced fresh cilantro
  • 12 slices whole wheat nut bread
  • 1 small package sprouts (daikon or radish)
  • 2 ancho chiles—reconstituted and put through food mill (puréed)
  • Salt to taste

Directions:

Beat cream cheese to spreading consistency. Fold in 1/2 ancho chile purée and cilantro. Salt to taste. Spread cream cheese mixture on one side of 4 bread slices. Cover with sprouts. Lightly coat both sides of 4 more slices of bread with cheese. Place on top of sprout-covered slices. Place smoked chicken on top, then finish with 4 more pieces of bread which have been coated lightly with cheese. Trim crust to make even. Cut into 4 rectangles or triangles. Cover lightly and refrigerate up to several hours until ready to serve.
