Quick & Easy Meatloaf

Ingredients:
- 1 egg
- 1/4 cup 2% milk
- 1/4 cup ketchup
- 1 tsp (each) instant minced onion, basil, and parsley
- 1 tsp salt
- 1/8 tsp garlic salt
- 1/4 tsp freshly ground pepper
- 1/2 green pepper, diced (optional)
- 9 single saltine crackers, finely crushed
- 1½ lbs Coleman ground chuck
Directions:
In a large bowl, mix ingredients using the above order. Gently stir in the
Coleman ground chuck. Divide the mixture into four equal parts, and shape
into small loaves. Place loaves in a glass casserole dish.
Using a 900 – 1,000 watt microwave, cook the loaves on high for 12 – 13 minutes
(if your microwave does not have a turntable, turn at 6 minutes). Cook an
additional 5 – 7 minutes at 50% power. Allow standing time of 10 minutes,
and then check for doneness. The internal temperature should read 160° F.
Return loaves to oven at 50% power if more time is needed. Drain excess grease,
and place loaves on a paper towel-lined plate to absorb additional fat. Serve
on a meat platter with additional ketchup or salsa on the side.
Serve this meatloaf with boiled red-skin potatoes and a green salad tossed
with tidbits of fresh broccoli, tomato, garbanzo beans, and a sprinkling of
grated cheese. Add a loaf of your favorite crusty bread and bowl of strawberries
for dessert! Delicious, yet very quick and easy.
