Greek Burgers

Ingredients:
Burgers
- (1) 10-oz pkg frozen chopped spinach, thawed, drained, and squeezed dry
- 1 egg white
- 1 1/2 Tbsp fresh lemon juice
- 1/4 tsp freshly ground pepper
- 3/4 lb Coleman Natural Beef™ ground chuck (or lamb)
- 3/4 cup feta cheese
- 1/4 cup chopped fresh mint
Cucumber Dill Sauce
- 1/4 cup peeled, seeded, chopped cucumber
- 1/4 cup plain low fat yogurt
- 1/2 tsp chopped fresh dill
- 1 small garlic clove, minced
Combine all ingredients, and mix well. Refrigerate until
ready to serve with burgers.
Directions:
Combine the spinach, egg white, lemon juice, and pepper in a bowl. Add ground
chuck or lamb, cheese, and mint; mix lightly. Form into four 1/2-inch-thick
patties. Grill to the internal temperature of 160°F (about 5 minutes per
side). Serve hamburger buns with Cucumber Dill Sauce
Serve the stir-fried beef with rice. Add a fresh fruit dessert to complete
the meal.
