A 30-minute Main Dish Entry by Mary Knisley

Ingredients:

  • 1 lb Coleman ground chuck, chicken, or turkey
  • (1) 16-oz can fat-free refried beans
  • 1 pkg taco seasoning mix
  • (1) 8-oz pkg shredded Mexican-style four-cheese blend
  • 1/4 cup water
  • 1 Italian bread shell (Boboli*) or purchased pizza crust
  • 1 cup salsa
  • Guacamole and sour cream (optional)

Directions:

Preheat oven to 425º F. Cook ground meat in a nonstick skillet over medium heat until thoroughly cooked (no pink). Drain well and stir in taco seasoning mix and water. Cook and stir 2 – 4 minutes.

While ground meat is cooking, place bread shell on a cookie sheet. Spread evenly with beans. Sprinkle one half of the cheese over beans. Spoon cooked meat over the bean/cheese layer. Top with remaining cheese.

Bake 8 – 10 minutes or until cheese is melted. Top with salsa. Cut pizza into wedges and serve with guacamole and sour cream, if desired.
