Grilled Salmon Fillets

Ingredients:
- 2 lbs fillet of salmon, small bones removed
- 1 Tbsp soy sauce
- Tabasco sauce, to taste
- Juice of 4 limes
- 2 Tbsp chopped fresh dill
- 1 clove garlic, pressed
- Salt and freshly ground pepper, to taste
- 1 cup Vera Jane's Extra-Virgin Olive Oil
- Dill sprigs for garnish
Directions:
Place salmon fillets in a glass dish. Combine remaining ingredients,
and pour over the salmon. Marinate 30 minutes to 1 hour. Grill
skin-side-down for approximately 8 minutes, then turn gently
onto flesh side for 2 more minutes (just long enough to create
sear marks). Garnish with sprigs of dill, and serve with a
drizzle of olive oil.
Makes 8 (3-oz) servings
