Grilled Salmon Fillets

Ingredients:

  • 2 lbs fillet of salmon, small bones removed
  • 1 Tbsp soy sauce
  • Tabasco sauce, to taste
  • Juice of 4 limes
  • 2 Tbsp chopped fresh dill
  • 1 clove garlic, pressed
  • Salt and freshly ground pepper, to taste
  • 1 cup Vera Jane's Extra-Virgin Olive Oil
  • Dill sprigs for garnish

Directions:

Place salmon fillets in a glass dish. Combine remaining ingredients, and pour over the salmon. Marinate 30 minutes to 1 hour. Grill skin-side-down for approximately 8 minutes, then turn gently onto flesh side for 2 more minutes (just long enough to create sear marks). Garnish with sprigs of dill, and serve with a drizzle of olive oil.
