Italian Meatballs

Ingredients:

  • 1 lb Coleman ground chuck
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 lb Italian sausage, optional
  • 3 Tbsp chopped Italian flat-leaf parsley
  • 1 small onion, finely chopped
  • 1/2 cup fine, dry, bread crumbs
  • 2 tsp finely chopped garlic
  • 1 tsp salt
  • 1 egg, slighty beaten
  • Freshly ground pepper

Directions:

Combine above ingredients in a large mixing bowl. Mix thoroughly, but gently, by hand or with a wooden spoon.

Preheat oven to 350º F. Spray a cookie sheet (with sides) using non-stick cooking spray. Gently shape meat mixture into balls (about 12), and arrange in the prepared pan. Bake 20 – 30 minutes or until the internal temperature is 160º F.

The meatballs can also be fried, but this will change the analysis.
