Asian Ginger Lime Marinade

Excellent with sea scallops or shrimp — enough for 1½ lbs.
Adapted from Marinades, the Secret of Great Grilling by Melanie Barnard.
Ingredients:
- 6 Tbsp fresh lime juice
- 3 Tbsp hot chili sauce
- 3 Tbsp fish sauce
- 3 Tbsp grated fresh ginger
- 3 Tbsp hoisin sauce
Directions:
In a small bowl, combine all ingredients. Place seafood in a single layer
in a shallow glass dish. Add marinade, turning to coat. Cover and refrigerate,
turning occasionally, for 30 minutes. Grill or broil as desired.
Makes 4–6 servings
