Easy Marinated Chicken

Ingredients:
- 4 whole chicken breasts (about 3 1/2 lbs)
- 1 garlic clove, peeled, minced
- 1/4 tsp lemon zest, minced
- 1 Tbsp white wine vinegar
- 2 tsp fresh oregano leaves
- 1 Tbsp minced, fresh Italian parsley leaves
- 1 Tbsp salad oil
- 3 Tbsp olive oil
- Salt & freshly ground pepper
Directions:
Combine garlic, lemon zest, vinegar and herbs. Whisk in oils in a slow, steady
stream. Add salt and pepper to taste. Marinate at least 4 hours or up to 24.
Cook chicken to an internal temperature of 165°F.
