Country Greek Salad

Ingredients:
- 4 cups salad greens (romaine, escarole)
- 1 clove garlic
- 8 kalamata olives
- 1 tsp coarse salt
- 4 - 8 anchovies (optional)
- 1 small red onion, sliced into rings
- 1 tsp dried oregano
- 1 small green pepper, cut into rings
- 2 Tbsp lemon juice or red wine vinegar
- 2 tomatoes, cut into wedges
- Salt and pepper, to taste
- 1/2 cup feta cheese, crumbled
- 1/2 cup extra-virgin olive oil
Directions:
Wash, dry and tear salad greens into bite-size pieces. Crush the garlic clove
and mash to a paste with the salt. Add greens, vegetables, cheese, olives,
anchovies and oregano. Sprinkle with the lemon juice or wine vinegar. Salt
and pepper, to taste. Drizzle with the olive oil. More lemon juice, red wine
vinegar or oil may be added, to taste.
