Roasted Vidalia Onions

An easy accompaniment to beef, chicken, or lamb.
Ingredients:
- 2 - 3 large Vidalia onions
- 1/2 tsp freshly ground pepper
- 3 Tbsp extra-virgin olive oil
- 2 tsp chopped fresh rosemary
- 2 Tbsp chopped garlic
- 2 tsp chopped fresh thyme
- 1 tsp coarse salt
- 1/4 cup balsamic vinegar
Directions:
Remove onion skins; cut onions in half from stem to root end. Combine oil,
garlic, salt, pepper and herbs. With your hands, coat onions with the mixture
and place in a covered baking dish. Bake in a preheated 350º F oven for approximately
1 hour or until soft. Baste occasionally. Remove from oven and drizzle generously
with balsamic vinegar.
