Maple Mustard Salad Dressing

From DLM's School of Cooking class, Barbara Lauterbach's New England — Now and Then. A quick salad dressing with a surprise ingredient!

Ingredients:

  • 1/3 cup vegetable oil
  • 2 Tbsp Dijon mustard
  • 2 Tbsp red wine vinegar
  • 2 Tbsp Pommery mustard
  • 1 clove garlic, crushed
  • ¼ cup 100% pure maple syrup
  • 1 small shallot, chopped
  • Salt, to taste
  • ¼ tsp freshly ground black pepper
  • Salad greens, washed

Directions:

Whisk together the oil, vinegar, garlic, shallot, pepper, mustards, syrup and salt to taste. Toss with salad greens just before serving.
