Quick & Easy Southwestern Beef Stew

Ingredients:

  • 2 Tbsp cornstarch
  • 1 Tbsp chili powder
  • 2 Tbsp water
  • ¾ cup picante sauce
  • 1 Tbsp oil
  • 1 can (about 16 oz) black beans
  • 1 lb boneless beef sirloin steak, cut into 1" cubes
  • 1 can (about 15 oz) pinto beans
  • 1 can (about 14½ oz) stewed tomatoes

Directions:

In a cup, mix cornstarch and water until smooth. Set aside. Heat oil in a Dutch oven over medium-high heat. Cook beef and chili powder until beef is browned, stirring often.

Add picante sauce, black beans, pinto beans and tomatoes. Heat to a boil. Cover and cook over low heat for 5 minutes or until beef is done. Stir cornstarch mixture and add. Cook until mixture boils and thickens, stirring constantly.

Makes 6 servings
