Heart-Friendly Sandwich

Ingredients:

  • 8 slices multi-grain sandwich bread
  • 1/3 cup mild thick-and-chunky salsa
  • 1/4 cup frozen corn, thawed in microwave
  • 3/4 cup grated low-fat cheddar cheese
  • 8 very thin slices fat-free turkey (6 ounces)
  • 2 tsp taco seasoning mix
  • Vegetable oil cooking spray
  • Sliced melon to garnish

Directions:

Lay four slices of bread on a clean surface. In a small bowl, stir together the salsa and corn. Set aside.

Layer cheese, turkey and salsa onto bread.

Spray the tops of the sandwiches with vegetable oil cooking spray and sprinkle with 1 teaspoon taco seasoning mix. Spray a large, nonstick skillet with vegetable oil cooking spray and warm the skillet over medium heat.

Lay the sandwiches in the skillet, seasoned side down. Spray the second side with cooking spray and sprinkle with the remaining taco seasoning mix.

Grill the sandwiches for 1 to 2 minutes on each side until golden brown. Garnish with melon slices.

Makes 4 Sandwiches
