Egg Puff

Ingredients:

  • 1.25 cups egg substitute (or 5 whole eggs)
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 cup chopped onion
  • 1/4 cup chopped red pepper
  • 1 cup Trauth fat-free cottage cheese
  • 1/2 cup grated reduced-fat Cheddar cheese (or regular)
  • 1/2 tsp salt

Directions:

Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with no-stick cooking spray. Pour the egg substitute into a large bowl. In a small dish, stir together the flour and baking powder. Pour over the egg substitute and beat until completely blended. Beat in the cheeses, onion, red pepper, cheeses and salt.

Bake for about 30-35 minutes or until puffy and set.
