Chilean Sea Bass with Zucchini

Ingredients:
- 1.5 lbs Chilean sea bass fillets
- 3 cloves garlic, minced
- 2 Tbsp cilantro, finely chopped
- 2 Tbsp oil-packed sun-dried tomatoes, drained and chopped, optional
- 2 green onions, chopped
- 1 lime
- Dash white wine
- 2-3 zucchini, thinly sliced
- 2 Tbsp butter, melted
- Kosher salt
- Freshly ground pepper
Directions:
Arrange sea bass fillets in a single layer in a greased baking dish. Spread
garlic, cilantro, sun-dried tomatoes and green onions over fish. Squeeze lime
juice over fish. Add a dash of wine. Arrange zucchini around fish. Drizzle
with butter and add salt and pepper to taste.
Cover tightly with foil and bake at 450° until cooked through, about 15-20
minutes.
