Chilean Sea Bass with Zucchini

Ingredients:

  • 1.5 lbs Chilean sea bass fillets
  • 3 cloves garlic, minced
  • 2 Tbsp cilantro, finely chopped
  • 2 Tbsp oil-packed sun-dried tomatoes, drained and chopped, optional
  • 2 green onions, chopped
  • 1 lime
  • Dash white wine
  • 2-3 zucchini, thinly sliced
  • 2 Tbsp butter, melted
  • Kosher salt
  • Freshly ground pepper

Directions:

Arrange sea bass fillets in a single layer in a greased baking dish. Spread garlic, cilantro, sun-dried tomatoes and green onions over fish. Squeeze lime juice over fish. Add a dash of wine. Arrange zucchini around fish. Drizzle with butter and add salt and pepper to taste.

Cover tightly with foil and bake at 450° until cooked through, about 15-20 minutes.
