Ingredients:
- 2 boneless chicken breasts
- 4 Tbsp pesto or olive paste sauce
- Kosher salt
Directions:
Preheat oven to 450 degrees F. Spread a layer of Kosher salt about 1/2-inch
in depth in a roasting pan.
Spread 1 Tablespoon of sauce under the skin of each chicken breast. Place
chicken on top of salt and roast in the oven until the internal temperature
reaches 165 degrees, about 20-25 minutes. Let rest 10 minutes before carving.
