Peanut-Sesame Noodles

Ingredients:
- 12 oz. spaghetti or linguine
- 3/4 cup soy sauce
- 1/2 cup peanut butter
- 3/4 cup low salt chicken broth
- 1 Tbsp sesame oil
- 1 Tbsp honey
- Chili oil to taste
- 2 tsp minced garlic
- 2 cups fresh broccoli slaw
- 1 cup grated carrots
- Crushed red pepper flakes
Directions:
Cook pasta in salted water. While pasta is cooking, in a microwave-safe bowl
stir together soy sauce, peanut butter, chicken broth, sesame oil, honey,
garlic and chili oil. Microwave on 100% power for 2 minutes to melt peanut
butter. Stir and reserve.
During the last two minutes of pasta cooking time, add the broccoli and carrots.
Drain pasta and vegetable quickly in a colander, but do not rinse. Return
to pot and toss well with penut sauce and red pepper flakes. Serve immediately.
