Peanut-Sesame Noodles

Ingredients:

  • 12 oz. spaghetti or linguine
  • 3/4 cup soy sauce
  • 1/2 cup peanut butter
  • 3/4 cup low salt chicken broth
  • 1 Tbsp sesame oil
  • 1 Tbsp honey
  • Chili oil to taste
  • 2 tsp minced garlic
  • 2 cups fresh broccoli slaw
  • 1 cup grated carrots
  • Crushed red pepper flakes

Directions:

Cook pasta in salted water. While pasta is cooking, in a microwave-safe bowl stir together soy sauce, peanut butter, chicken broth, sesame oil, honey, garlic and chili oil. Microwave on 100% power for 2 minutes to melt peanut butter. Stir and reserve.

During the last two minutes of pasta cooking time, add the broccoli and carrots. Drain pasta and vegetable quickly in a colander, but do not rinse. Return to pot and toss well with penut sauce and red pepper flakes. Serve immediately.
