Bulgur Vegetable Saute

Ingredients:

  • 1 cup bulgur wheat
  • 1/2 tsp salt
  • 1 Tbsp olive oil
  • 1 red onion, sliced
  • 1/2 green and 1/2 red peppers, sliced
  • 6 mushrooms, sliced
  • 1-2 Tbsp balsamic vinegar

Directions:

Boil 1 cup water; add the salt and bulgur wheat. Remove from heat, cover and let stand 30 minutes. Sauté vegetables in oil for 3 minutes or until crisp-tender. Add bulgur wheat and balsamic vinegar. Warm or serve at room temperature.

Enjoy as a main entreé with toasted pita bread triangles and fresh fruit, or use as as warm nutritious salad along with roasted bone-in chicken breasts.

Makes 3-4 servings
