Vegetable Fajitas

Ingredients:
- 1/4 cup olive oil
- 1 medium red onion, cut in half, then sliced thickly
- 2 medium yellow onions, cut in half, then sliced thickly
- 2 large cloves garlic, chopped
- 5 bell peppers, red, yellow, green, sliced into 1/2-inch" ribs
- 3 Roma tomatoes, cut in wedges
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp crushed red pepper flakes, or to taste
- juice of 1 lemon
- juice of 1 lime
- salt and freshly ground pepper, to taste
- (12) 6-inch flour tortillas
- Accompaniments: guacamole, heated refried beans, sour cream,
shredded Monterey Jack cheese.
Directions:
Heat olive oil in a large skillet over medium heat. Add onions and garlic
and sauté 10 minutes until slightly softened. Add peppers, tomatoes, cumin,
chili powder and red pepper flakes. Cover and cook until peppers are crisp-tender.
Raise heat to high, remove cover, and add lemon and lime juice. Continue cooking,
stirring frequently for 3 minutes or until peppers are lightly brown and most
of liquid is evaporated.
Warm tortillas and serve with accompaniments.
