Linguine with Spinach and Sausage

Ingredients:
- 1 Tbsp olive oil
- 1/4 cup chopped red onion
- 3 chopped scallions, white and green tops
- 3 medium tomatoes, seeded and chopped
- 1/2 lb Italian sausage links, skin removed
- 1/2 lb linguine
- 6 oz trimmed fresh spinach leaves, cut in julienne style
- 3 Tbsp freshly grated Parmesan cheese
Directions:
Bring a large pot of water to boil. Sauté red onion and scallions in oil
until slightly softened. Add tomatoes and cook 6-8 minutes. Meanwhile, cut
sausage into 1/4 inch pieces, being careful to retain shape, and boil with
one cup of water. Cook over medium heat until water evaporates and the sausage
pieces are lightly browned. Add to tomato mixture.
Add pasta to boiling water and cook until al dente, then drain. Place spinach
in a large serving dish. Toss pasta and tomato mixture together, and toss
again in the serving dish. Sprinkle with Parmesan cheese.
Makes 3-4 servings
