Shrimp Scampi

Scrumptious! Quick appetizer or main course. (Adapted from
The New Basics by Rosso & Lukins)
Ingredients:
- 6 Tbsp unsalted butter, softened
- 1/4 cup olive oil
- 1 Tbsp minced garlic
- 1 Tbsp minced shallots
- 2 Tbsp minced, fresh chives
- Salt and freshly ground pepper, to taste
- 1/2 tsp paprika
- 2 pounds large shrimp, peeled and deveined
Directions:
Preheat broiler or grill. Combine butter, oil, garlic, shallots, chives,
salt, pepper, and paprika in a large bowl. Blend thoroughly. Toss the shrimp
in the mixture until coated. Broil or grill the shrimp as close as possible
to the flame for 2 minutes on each side. Serve immediately.
Makes 6 servings
