Firehouse Baked Beans

Molasses-baked beans without the tomato base. This recipe is a Wisconsin crowd pleaser adapted from the Norske Nook Cookbook.

Ingredients:

  • 2 lbs dried cranberry, navy or yellow eye beans
  • 1/2 lb loin ribs, cut apart and rubbed with salt
  • 1/2 cup light molasses
  • 1 tsp dry mustard
  • 1 tsp salt
  • Freshly ground pepper
  • 1/2 cup brown sugar
  • 2 tsp grated onion

Directions:

Prepare dry beans by using the long or quick soaking method. Preheat oven to 325 degrees. Pour the beans into a large 5 quart pan. Add fresh water to cover, and cook 30 minutes or until beans show signs of cracking. (The color of the juice will look somewhat green.) Drain completely and pour into a 3 or 4 quart baking dish.

Add ribs, molasses, salt, pepper, brown sugar, mustard, onion, and enough water to cover. Bake for 3 hours. Add water if the beans become dry.

Makes 24 servings
