Quinoa Pilaf

A wonderful grain dish from local chef Paula Sideras.
Ingredients:
- 1 cup quinoa
- 2 Tbsp olive oil
- 1/2 cup minced onion
- 1/4 cup finely diced celery
- 1 tsp minced garlic
- 1/3 lb fresh mushrooms, thinly sliced
- 1.5 cups water or low-salt
- chicken broth
- .5 - 1 tsp salt
- 3 Tbsp minced parsley
- 1 tsp fresh thyme
- 1/4 tsp black pepper
Directions:
Rinse quinoa thoroughly until water runs clear. Use a fine strainer or cover
with water, agitate and drain. Set aside to dry while preparing remaining
ingredients.
In a medium skillet, heat olive oil. Add onions, celery, garlic and mushrooms.
Sauté three or four minutes until slightly browned.
Add quinoa and stir for a minute or two to coat with oil and finish drying
the quinoa. Add water or broth, cover and bring to a boil. Reduce heat and
simmer 10 minutes. Remove from heat and add remaining ingredients. Serve immediately.
Makes 4-6 servings
