Quinoa Pilaf

A wonderful grain dish from local chef Paula Sideras.

Ingredients:

  • 1 cup quinoa
  • 2 Tbsp olive oil
  • 1/2 cup minced onion
  • 1/4 cup finely diced celery
  • 1 tsp minced garlic
  • 1/3 lb fresh mushrooms, thinly sliced
  • 1.5 cups water or low-salt
  • chicken broth
  • .5 - 1 tsp salt
  • 3 Tbsp minced parsley
  • 1 tsp fresh thyme
  • 1/4 tsp black pepper

Directions:

Rinse quinoa thoroughly until water runs clear. Use a fine strainer or cover with water, agitate and drain. Set aside to dry while preparing remaining ingredients.

In a medium skillet, heat olive oil. Add onions, celery, garlic and mushrooms. Sauté three or four minutes until slightly browned.

Add quinoa and stir for a minute or two to coat with oil and finish drying the quinoa. Add water or broth, cover and bring to a boil. Reduce heat and simmer 10 minutes. Remove from heat and add remaining ingredients. Serve immediately.

Makes 4-6 servings
