Spinach Quiche -- The Healthy Way

A winning recipe from DLM's Healthy Alternative Recipe Contest
1993. Submitted by Ulrike Massey.
Ingredients:
- 2 medium potatoes, diced
- 1 small onion, diced
- (1) 10 oz frozen, chopped spinach, thawed, well drained
- 1 cup low-fat mozzarella cheese
- 1 cup low-fat cheddar cheese
- 1 cup turkey ham, diced
- (3) 4 oz cartons egg substitute, thawed
- 1.5 cups nonfat yogurt
- Salt, freshly ground pepper, and garlic powder to taste
Directions:
Combine all ingredients. Pour into (2) 8-inch pie pans. Bake at 425 degrees
F. for 15 minutes; reduce temperature to 350 degrees F. and bake 30 minutes
or until knife inserted 1-inch from edge comes out clean.
Makes 12 servings
