Buttermilk Biscuits

A great appetizer, buttered then filled with slices of Heavenly Ham.

Ingredients:

  • 3 cups all-purpose flour
  • 2 Tbsp baking powder
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 tsp cream of tartar
  • 1/4 tsp cayenne pepper
  • 1/2 cup solid vegetable shortening
  • 1/2 cup cold unsalted butter, cut into chunks
  • 1 cup buttermilk, at room temperature

Directions:

Preheat oven to 375°F. In a food processor, combine the flour, baking powder, sugar, salt, cream of tartar, and cayenne pepper. Add the shortening and butter and pulse until the mixture forms coarse crumbs. Add 1 cup of the buttermilk and pulse until a firm dough forms. Add a bit more buttermilk if the dough is too thick.

Knead the dough 8 to 10 times. Roll into a 1/2" thickness. Cut the dough into rounds. Bake on a greased cookie sheet 13-15 minutes.
