Crunchy Brown Rice

Ingredients:

  • 1 cup wild rice blend
  • 2 cups water or broth
  • 1/3 cup chopped red pepper
  • 1/3 cup chopped celery
  • 1 bunch scallions, chopped with some green tops
  • 1/3 cup parsley, minced
  • 1/2 cup chopped pecans (optional)
  • 2 Tbsp olive oil
  • Salt and freshly ground pepper to taste
  • 1-2 tsp balsamic vinegar (optional)

Directions:

In a medium saucepan, combine rice and liquid. Bring to a boil and then simmer for 45-55 minutes. Cool until almost room temperature. Stir in remaining ingredients and season with salt, pepper and balsamic vinegar, if desired.

Serve warm as a side dish or at room temperature for a salad.

Makes 4 servings
