Crunchy Brown Rice

Ingredients:
- 1 cup wild rice blend
- 2 cups water or broth
- 1/3 cup chopped red pepper
- 1/3 cup chopped celery
- 1 bunch scallions, chopped with some green tops
- 1/3 cup parsley, minced
- 1/2 cup chopped pecans (optional)
- 2 Tbsp olive oil
- Salt and freshly ground pepper to taste
- 1-2 tsp balsamic vinegar (optional)
Directions:
In a medium saucepan, combine rice and liquid. Bring to a boil and then simmer
for 45-55 minutes. Cool until almost room temperature. Stir in remaining ingredients
and season with salt, pepper and balsamic vinegar, if desired.
Serve warm as a side dish or at room temperature for a salad.
